Well, for starters, Mort gets the kind of workplace romance that would make HR departments weep. Falling for your boss's daughter is awkward enough, but when your boss happens to be the personification of mortality itself, things get... complicated. Pratchett handles this delicate situation with all the subtlety of a sledgehammer, which is exactly right for his brand of satire.
The real joy lies in watching Death attempt to understand human nature while Mort bumbles through his new responsibilities. It's like watching a fish learn to ride a bicycle, except the fish is made of bones and the bicycle is the fundamental mechanics of life and death. Pratchett's genius lies in making the absurd seem logical and the logical seem absurd.
